recipe: clean and remove the outer skin of the onions. Dip them in boiling salted water to whiten them. Then drain on a cloth. Fill glass or glass jars with onions, pour over the boiling vinegar. This one must completely cover the onions. Add bay leaf, thyme, tarragon, cloves and pepper. Close only when vinegar is cooled, with parchment paper.

Canned pickles

ingredients: 1 kg of gherkins, 1 liter of vinegar, salt, cloves, savory, tarragon and peppercorns.

recipe: place the pickles in a pot with a few handfuls of salt. Stir them and leave them 24 hours. At the end of this time, rub the pickles to get rid of salt. Fill jars with glass or sandstone. Add pepper, cloves, savory and tarragon. Heat the vinegar, boiling it over the pickles. Cool and close.
